Quick and Easy Breakfast Recipes for Busy People

Breakfast is the most important meal of the day, and as a particularly busy person, I feel I am more than qualified to tell you a few of my favorite quick and easy breakfast recipes, and that is exactly what I am going to do. As a general rule, you will want to keep your breakfast light if you have a busy day ahead of you. It is never a good idea to overwhelm yourself with food first thing in the morning, as it often just ends up in you feeling heavy, lethargic, and sick.

Breakfast Omelettes and Egg Bakes

What’s better than an omelet or egg bake in the morning? Cheesy egg bakes! A favorite among the folks at Corrie Cooks. For these, you just need eggs, tomatoes, and cheese! You can make them the night before and microwave them, or just make them first thing in the morning. Alternatively, you could just whip up an omelet first thing in the morning too. Eggs are one of the best breakfasts that you can eat, as they give you energy and can motivate you to keep going throughout the day.

Porridge with Raisins and Bananas

Porridge is a power breakfast, known for giving you a dose of protein, and a lot of energy. While some prefer to have porridge with berries, I personally prefer to have porridge with raisins, bananas, and a sprinkle of brown sugar.  This dish will get you going first thing in the morning and help you to stay awake throughout the day. If you are busy, porridge is breakfast for you. It offers slow-release energy which keeps you going from morning ‘til night, maybe with a few top-ups here and there.

 

Espresso and Toast

Seriously, what is better than espresso and some toasted white bread? The espresso will give you that oomph and the toast will stop your belly from rumbling. As I said, when you are particularly busy, it is always best for you to eat light. You do not want to overwhelm yourself first thing in the morning, and when you start your day with espresso and toast, you most certainly will not be overwhelming yourself. 

Espresso and toast is a great way to keep yourself going, full, and to put a smile on your face every single morning! You could even have a slice of cheese alongside it for a real continental breakfast.

Muesli

Muesli is a very healthy breakfast, and while not extravagant, one that you can eat, and it can provide you with the nutrients you need to start your day off right. Muesli can be made at home, or you can buy it straight in the packet. I prefer the former, though if you want to buy it already made, then go ahead. I find that when making it yourself, you can reduce the amount of sugar that is in your muesli, which is often a lot and actually counteracts any of the benefits that you might receive by eating it.

Breakfast, the best meal of the day, seriously. When you are busy, you want to go easy, and the recipes and meals here are all most certainly that.
